Harvest Bread

We have this favorite little deli/bakery in our neighborhood, and they sell "harvest bread," which is loaded with goodies. So I came up with my own version...and it has become one of our favorite treats.

It is a simple banana bread recipe, and you just add whatever fillers you like. i.e. cranberries, pecans, shredded coconut, chocolate chips. The possibilities are endless!


This is the recipe for the bread pictured here.

1 cup sugar
1/2 cup butter
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
2 eggs
2 mashed bananas
1/2 cup white morsels
1/2 cup shredded coconut
1/4 chopped walnuts

Cream the sugar and butter. Add eggs one at a time and mix well after each one. Sift together the dry ingredients and mix into the batter. Stir in bananas and other ingredients. Pour into a greased loaf pan. Bake at 350 for one hour.

Some tasty combinations are:
1. Craisins, pecans & coconut
2. Peanut butter chips & pecans
3. Chocolate chips, coconut and walnuts
